pistachio chicken lettuce wraps

Who said you need rice, pasta, or bread to call it a meal? Welcome to the world of lettuce wraps. I’m crazyyyy for them. There are numerous creative ideas to make delicious meals with lettuce to make your belly and family happy.

This meal can be ready in under 30 mins.  Lettuce wraps are low in carbs, so no guilty feeling whatsoever for indulging. To cut down on the sodium you can use reduced sodium soy sauce.  If you don’t have pistachio on hands, feel free to use cashews or peanuts. I usually enjoy tweaking recipes to make them more appealing to my palate, and I’m sure you would love to do the same.  Don’t be discouraged to play around with the recipe until your taste buds are pleased.  You can add different kind of chopped vegetables, sauce (like siracha), spices, and whatever makes you happy.

You are going to love the crunchiness of the lettuce with the slight sweetness of brown sugar, little bit of saltiness from soy sauce, and the kick of spiciness from red crushed pepper. Perfect combination. OH GOD, I’m craving this again.

For the stir-fry sauce you will need:

  • 2 tbsp soya sauce
  • 1 tbsp vinegar
  • 1 tbsp brown sugar
  • 1/2 tsp crushed red pepper
  • 1/4 ground ginger or 1 tsp freshly chopped ginger

For pistachio chicken:

  • 1 lbs boneless chicken breast or thighs, diced
  • 2-3 tbsp oil (canola, vegetable, etc)
  • 1 large onion, diced
  • 2 clove garlic, chopped
  • 1 cup green pepper, chopped
  • 1/2 cup carrots, finely-diced
  • 1 tbsp soy sauce
  • 1/2 cup pistachio, chopped (I used salted)
  • salt and black pepper to taste

To assemble:

  • 8 leaves of romaine lettuce, more if needed
  • chopped cilantro, optional
  • sauce of your choice, optional

For the sauce: Mix all the ingredients and set aside.

For the Chicken:  Heat oil in a large pan, add diced chicken, garlic cloves, and little bit of black pepper.  Saute until done, don’t overcook it, otherwise it will dry up. Remove the chicken from the oil.  Add chopped onions, green pepper, carrots, and soy sauce. Saute until onions are browned.  Add stir-fry sauce, browned chicken, and pistachio. If its little less on salt or pepper, now is the time to add that.  Saute the mixture for few minutes and remove from heat.

Add chicken to individual lettuce leaves, add chopped cilantro, and drizzle sauce of your choice.

  1. But… I love bread, pastas and potatoes…. 😉
    I know they are totally not necessary. Sometimes it’s so good to eat something light and refreshing. I actually love this salad and make it often, love your addition of pistachios for that extra crunch!
    Sometimes I add a few rice noodles, so good with this type of chicken.
    Thanks for reminding me if this delicious salad, I need to make some soon!
