healthy peanut butter cookies

The simple pleasure in life.


Recently I’ve become obsessed with baking cookies.  It seems like there is a cookie season in our house.  I kinda like baking with peanut butter.  That means you are going to see quite a lot of cookie recipes in upcoming weeks around here especially with PB.

There are days when I’m really tired after getting the chores done, yet I have a desire to bake.  So those days I try to make something less time consuming.  These cookies are a prime example of how a simple recipe can be so delicious without too much mess and time.

Texture of the cookies is soft, slightly chewy if you don’t refrigerate the dough (which I didn’t), perfect with a glass of milk.

You will need:

  • 1/2 cup peanut butter
  • 3/4 tsp baking soda
  • 3 tbsp whole-wheat pastry flour or white all-purpose flour
  • 1/4 cup sugar
  • 2 tbsp brown sugar
  • 2 tbsp applesauce (I used 2-3 tbsp of mashed banana)
  • 1/2 tsp pure vanilla essence
  • pinch of salt (optional)

Preheat oven to 350 F.

In a medium bowl combine baking soda, flour, sugar, brown sugar, and salt.

Add peanut butter butter, applesauce, and vanilla.  Mix well.

Roll them into balls.  You will get around 12-16 cookies.  (If you want softer cookies then refrigerate the dough for atleast an hour).

Bake them for 8 minutes.

Let them cool for 5 minutes before removing them from cookie sheet.

  1. I’m not a big fan of peanut butter, but peanut butter cookies have a soft spot in my heart 🙂 These look delicious! I love cookies that have a soft interior, and yours look amazzingggg 🙂
