ginger cookies

This is a monthly staple in our house.


Our family enjoys these little delicious cookies all year long, especially my picky toddlers. You can never go wrong with them and they taste incredible.  I lost count of how many times I made them in last 4 years  for family and friends.  Everybody loves them. I always get raving reviews.


You will need:

  • 1 cup brown sugar
  • 3/4 cup oil
  • 1/4 cup molasses
  • 1 egg
  • 2 cups flour
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp cinnamon powder
  • 2 1/2 tsp ginger powder
  • white sugar for rolling the balls

Preheat oven to 375 F.

In a large bowl mix together brown sugar, oil, molasses, and egg.

In another bowl combine flour, baking soda, salt, cinnamon powder, and ginger powder.

Stir dry ingredients into molasses mixture.

Roll them into small balls and then roll each ball in sugar. Space them around 2  inches away on ungreased cookie sheets.

Bake for 6-8 minutes  (my oven takes exactly 6 minutes).

If you want it to be crunchy then lean towards longer baking time.  We like it chewy with slight crunch.
