Do you like shortbread?
If yes, then these babies will become your favorite. I didn’t see much difference in taste between shortbread and custard cookies except adding custard powder makes it yummier. Butter makes these cookies crumbly and give you that melt-in-your mouth texture.
These require minimal ingredients and less minimal exertion. Awesome, eh.
My husband is not big on shortbread kinda cookies, so I’m totally going to eat ’em when nobody is watching and share the rest tomorrow with my friends. InshaAllah.
You will need:
- 1 cup butter, softened
- 1 tsp vanilla essence
- 1 egg yolk
- 2 cups flour
- 1 cup icing sugar
- 1 cup custard powder
Preheat oven to 350 F and grease baking sheets.
Mix all the ingredients together with a mixer until dough comes together.
Shape into balls. Space cookies less than an inch apart, they barely rise.
Take a glass and press down on then balls to flatten them. If you want, you can use a fork to make a criss-cross pattern.
Bake in the oven for 15 mins.
Makes around 30+ cookies.
